Crockpot Mexican Lasagna

Equipment

  • 1 slow cooker

Ingredients
  

  • 6-7 burrito size tortillas
  • 1 Can refried beans
  • 8 Oz cream cheese softened
  • 1-2 Cans enchilada sauce
  • 1 Lbs ground beef
  • 1 Can rotel
  • 1 Pkt taco seasoning
  • 2 C fiesta blend cheese
  • 1 C sharp cheddar cheese
  • 1 Bunch green onions sliced

Instructions
 

  • Brown ground beef and add taco seasoning per instructions on seasoning packet. When browned: drain, if necessary, and add Rotel or 1 cup of salsa.
  • Mix the softened cream cheese and refried beans together.
  • Spray crockpot with non-stick cooking spray.
  • Place 2 tortillas in the bottom of crockpot, so that the bottom is covered.
  • Spread 1/2 of cream cheese mixture onto tortillas.
  • Spread 1/2 of ground beef mixture on top of cream cheese mixture.
  • Sprinkle fiesta blend cheese on top of ground beef layer.
  • Drizzle 1/2 of enchilada sauce on cheese layer.
  • Repeat steps 4-8 to create a second layer.
  • Place 2-3 tortillas on top, cover with sharp cheddar cheese, and sprinkle chopped green onions.
  • Place the lid on the crockpot and set to high.
  • Cook on high for 1-2 hours.
